We’re always down for a challenge. And this month, Recipe for Success – a Houston non-profit dedicated to combating childhood obesity through early education – is challenging everyone to try 30 different vegetables over 30 days. In short, #VegOut2015.
We didn’t make it all the way through a Whole 30 challenge in January (whoops), but this is one that seems reasonable – we cook 4-5 nights a week, so it can’t be that hard to incorporate some new veggies, right?
RFS created Pinterest boards for each Veggie of the Day, which are already making me hungry. (Fennel day: I. cannot. wait.) I’m excited to try some new things, and I promise to keep you posted! Bring it, green beans.
