After our strawberry-picking adventure, I had to use up some of those strawberries. Of course, we ate some while they were still fresh, but I froze most, knowing that between Dara and I, it would be kind of hard to eat 10 lbs of strawberries before they went bad.
So I’ve started mixing them in smoothies for snacks, and for light dinners when I have a heavy lunch at work. My mother-in-law gave us a NutriBullet blender for Christmas, so we’ve been caught up in an obsession with smoothies for the last few months. Here’s my favorite strawberry smoothie recipe. It packs in a ton of nutrients: oatmeal for high fiber, protein, magnesium. Strawberries for potassium, Vitamin K, and antioxidants. Plain greek yogurt for calcium, protein, zinc, and vitamins B6 and B12. Almond milk for protein, Vitamin E, and other nutrients. Intrigued? Here’s the deets:
1 cup frozen strawberries (I sometimes substitute raspberries)
1/2 cup almond milk
1/2 cup plain Greek yogurt
1/2 cup old-fashioned oats (uncooked)
1 tablespoon honey
Combine in blender. Serve cold.
